One of the things I most love about the arrival of summer is fresh blueberries.
And I especially love my blueberries bursting with flavor in hot blueberry muffins straight out of the oven. When I'm feeling decadent, a pat of butter melting lovingly on one of those muffins is a splendid experience. How I wish you could join me!
At least I can give you a nice and easy recipe, if you are in the mood of baking your own. This recipe uses bananas and whole wheat flour, so you can even convince yourself that they are healthy :)
Blueberry Banana Muffins
Preheat your oven to 400ºF and grease or line the muffin tins. Combine 1 cup of plain flour, 1 cup of whole wheat flour, 1/3 cup brown sugar, 1 Tbsp. baking powder, a pinch of salt and a dash of cinnamon in a large bowl. Separately, stir together 1 mashed ripe, medium-sized banana, 1/3 cup melted butter or oil, 1 beaten egg, and 1/2 cup orange juice. Add wet mixture all at once to dry ingredients. Fold in carefully 1 1/2 cups fresh blueberries. Spoon batter into muffin tins, and bake for 15-18 minutes or until golden brown. Very best served warm!
