I'm doing my best to include more fruits and vegetables in our diet, despite having two very picky, very carnivorous children.
Some of the veggie dishes I've been making lately include this green bean, cherry tomato, and feta cheese salad,
a warm zucchini, red onion, gorgonzola tart,
baked mushrooms stuffed with goat cheese, shallots, and sun-dried tomatoes
a spinach and pine nut pastry
and an apple cake with a delicate crispy almond crust
which disappeared in a flash.
I want to combine healthy with delicious, and I notice that I am leaning towards lots of "comfort food" during January - what have been some of your favorite recipes this month?
