A beautiful way to enjoy a fresh, healthy salad during the winter months.
Winter Salad with Fennel, Oranges, and Pomegranate
4 cups baby spinach, arugula, or mixed greens, washed
1 large fennel bulb, trimmed and chopped finely
3 mandarine oranges, peeled and separated
seeds from 1/2 pomegranate
juice of 1 orange (or roughly 1/3 cup)
juice of 1/2 lemon
4 Tbsp. olive oil
salt/pepper to taste
Toss washed greens and chopped fennel with juices, olive oil, salt and pepper to taste. Sprinkle with orange and pomegranate seeds, and serve. Easy, beautiful, perfect.
Note: To release the pomegranate seeds easily, first cut the fruit in half. While holding the cut side down, slap the pomegranate peel with the back of a wooden spoon (like spanking a baby's bottom). If the pomegranate is ripe, the seeds will fall out quickly.
